SUMMER EGGPLANT SALAD
4-5 eggplant med size (grilled, peeled, & sectioned)
2 tomatoes cut into pieces
salad dressing:
2 tsp capers
3 thin green onions (sliced thin)
1 tsp sesame oil
hot pepper sauce (to taste)
3 tbs vinegar
1 tbs soy sauce
1 1/3 tbs sugar
grill eggplant and cool; add cut-up tomatoes; mix ingredients for salad dressing and pour over eggplants and tomatoes; serve
